Delicious and nutritious Granola
Prepare and bake oats
Melt:
- ½ C honey
- 6 T butter
Add:
- 1½ tsp. sea salt
- 1 tsp. cinnamon
- 1 tsp. vanilla extract
Add to a very large baking bowl:
- 9 C Old-fashioned oats
- ½ C unsweetened shredded coconut
Stir in melted liquid and evenly coat the oats
Bake the now coated oats: in large air fryer or on a large baking tray in a 375 deg F oven for about 15 mins. – stirring every few minutes to barely brown evenly. Keep an eye on it – burns easily if not frequently turned over. Allow to cool.
Prepare and mix the nuts, seeds, dried fruits +++
Use a very large baking bowl to mix:
1½ C Ground flaxseed
½ C each:
- Pecans (pieces)
- Almonds (slivered)
- Walnuts (pieces)
- Unsweetened coconut (flakes / shredded)
- Chopped dates
- Chopped dried apricots
- Cranraisins / Raisins
- Golden raisins
- Sunflower seeds
- Pumpkin seeds (raw, without husks)
Optionally add:
- ¼ C Orange peel (dried, chopped small)
- ¼ C Bee pollen
- ½ C Nutritional yeast (supplies B-vitamins)
Add cooled baked oats and thoroughly mix.
Store in airtight ziplock bags or container.
